Peanut butter and chocolate cupcakes

Today I went to Perlis to visit Baby Aushaf Iman and mommy Choc Jamaludin. Then as usual the four little pigs (Aiman, Mamat, Miza and sadly, myself included) went off to Jetty Kuala Perlis to fill our hearty appetite with spicy tomyum and delicious ikan bakar! Yummy! I made some peanut butter with chocolate topping and chocolate chips cupcakes for Choc and hubby, and some peanut butter cupcakes with colourful sprinkles to celebrate Mamat's birthday. It was a good day indeed. ;)

Rainbow apam

Assalamualaikum lovelies~


I made these for breakfast today. Rainbow apam! Made extra just in case I decided to visit Choc and her little prince later today, which I actually might. 

I swear, if you put a lot of colour in it, they wont perk up as much. Just look at the bright ones. Hence I tried the soft-coloured ones. They turned out really well, Alhamdulillah. Live and learn, they say.

Introducing......Jellybeans!

These are mini muffins, not cupcakes, although they look exactly like my cupcakes (Yes I ran out of ideas on how to decorate them teheee).

 The ones with jelly drops on top is my latest creation, and I call them 'Jellybeans'. The Jellydrops have different colours (red, yellow, blue, green, orange, purple) with different flavors. Adorable and delicious! =)

Baked oreo cheesecake

It's been a while since I last baked anything or updated anything in here. Been busy the past 2 weeks with courses, upcoming exam and of course the never ending school workload.

Took the opportunity during the labour day weekend to try a recipe of Oreo cheesecake. The recipe was so plain and easy! It was for a New York cheesecake but I had some Oreo at home and being an Oreo lover that I am, I modified the recipe. Also, I added some golden syrup with sour cream as the topping for the cake. I also toned down the quantity of the sugar so that it won't be too sweet. Gotta take care of our body, right? Because giving up cheesecake altogether is just wishful thinking.





Overall the recipe turned out pretty okay. The cake is smooth and creamy, but next time I will reduce the number of eggs used because I insist that I taste too much egg in the cake although nobody else did. Baked this around 9pm last night, this morning there's less than half a tray left. Success? Maybe. Hungry barbarians in the house? Definitely!

Here is the simple recipe, if anyone wants to try it.

Ingredients:
Crust
Crush butter cookie with some melted butter. Spoon into the pan and spread them evenly.
Cheesecake
2 (8 oz.) cream cheese, softened
2/3 cup sugar
3 large eggs
1/2 teaspoon vanilla
Topping
3 Tablespoons sugar
8 oz. sour cream
1 teaspoon vanilla
Directions:
1. Beat cream cheese, 2/3 cup sugar, 3 eggs, and 1/2 teaspoon vanilla with mixer until smooth. Pour into well greased 9 inch pie plate. (p/s: I just place the oreo biscuits all over/in the batter and some crushed oreo on top as a decoration)
2. Bake 22 to 25 minutes at 350 degrees F. Turn oven off. Remove cheesecake and cool for 5 minutes.
3. Combine 3 Tablespoons sugar, sour cream, and 1 teaspoon vanilla. Spread over warm cheesecake and return to oven for 5 minutes. (p/s: I added some golden syrup here)
4. Cool and refrigerate.

Milo chocolate cake. Ok I got lazy so I just decorated cincai2. The topping was made from Nutella spread  and the white dust was plain icing sugar. Easy peasy!

Today is Zombee's 24th birthday, people!!! Happy Birthday sweetheart... May you and I both have a wonderful year ahead of us. And let me know if the countdown is starting soon. =D

Stacked rainbow cupcakes

1. Sorry they are really messy+sloppy, I was in a rush putting them together.
2. They were supposedly smaller than this but....
3. I used vanilla buttercream frosting to 'paste' the pieces together.
4. Colours are safe food colouring, all are vanilla flavoured cupcakes.

p/s: The graveyard cake on the right side was my creation. Double whammy chocolate cake. I used crushed oreo for the dirt effect. The tombstone was tim tam biscuit. Yum! Used a (white) chocolate tube for writing RIP on the biscuit. The skeleton and tarantula was non-edible, but that didn't stop some people from trying to eat them!

Birthday cupcakes

Happy Birthday to a very special person, who raised and brought up my special person. May God bless you.

So today is Zombee's mom's birthday. He was so excited telling me about his plans for today; he's gonna wake up at 4am and bake a cake for his mom (he didn't wake up pun), then go to school for his olahraga practice, and come back and go bowling with the whole family. Best gilaks. And I was busy all day too, preparing this and that for my steamboat party (no picture, sucks!!!). Well, not lots of people were there per say, but it was still a party because all we did was eat eat eat and chat chat chat. After the peeps left, I started baking these birthday cupcakes because I sorta promised Zombee the night before (I was kinda joking, but it turned serious, and he'll throw a mild tantrum if I don't do what I said I would). So yeah, when the peeps were here I made strawberry cupcakes with fresh sliced strawberry on top, and then after I made a second batch of  birthday cupcakes. The pictures of strawberry cupcakes are sooooo blur it hurts to even blink after seeing it! Sorry! ;)

I'm so tired now, I'll probably fall asleep soon. Tomorrow I landed a date with the peeps, again. (it seems like we can't have enough of each other!)
